here's a recipe that just doesn't last long at my house:
1 small bag frozen peas [please...no canned peas, do you want your "spring" salad to look old and tired? canned peas can be gray..and soft...yikes!!]
1 bunch radishes
one small cucumber
three good sized celery stalks
>1 bunch green onions
1 cup milk
1/4cup white vinegar
1/2 cup real mayo[NO miracle whip]1/4 cup sugar
1 bag small shell macaroni
first mix the dressing. In a medium sized bowl put the mayo, the sugar, the milk and the vinegar and mix with a whisk, then set it to one side to "develop" [the milk will work with the vinegar to create an interesting flavor]
cook the shell macaroni, and while its chugging away on the stove, wash and slice the radishes and the celery and the onions. take the cucumber, cut off the ends and draw a fork down the sides to make nice grooves which will help absorb the dressing and look nice too!
toss the veggies into the bowl you will serve/store the salad in. In the sink, place a colander and empty the bag of frozen peas into it. When the macaroni shells are cooked, drain them into the colander over the peas..rinse and drain and toss into the bowl with the veggies.
over this ladle the dressing and let it sit at last an hour before eating so the dressing can be absorbed. **please check out the recipe for substitute mayo if you want to make this without using egg and milk products. for this recipe, leave out the mustard and paprika in the recipe.**
