recipes most requested

I get loads of requests for my recipes and rather than send many emails or writing out ton of 3x5 cards for people, I decided to locate them right here and just give out this URL , so much easier, go internet!!

BBQ PINEAPPLE

get a nice ripe pineapple at the grocery, and cut off the top then slice it in two length wise. Cut out the center core, it chewy and fibrous. this will also leave a gully down the center. put the pineapple to one side and get out a medium sauce pan, into this pour in the cheapest spaghetti sauce you can find. add to this the following:

minced garlic

minced onion

several large spoons of horseradish

at least 1/4 cup of maple syrup

1/4 cup dark brown sugar[packed].
I have mentioned no amounts for a few things above as it is up to you to play with it and make it to suite your tastes, though I will use a whole medium onion and several cloves [3 or 4] of garlic myself.
cook this until the sugar has dissolved and and onions are clear.
get out the pineapple halves and lay them on heavy foil and fill the gully you made with the sauce, wrap each half in their foil and place them on the bbq, or, better, put them in the fridge for a while. If you do this the day before a bbq, it will have time to penetrate the fruit and more sauce can be added at the time of the cookout. this sauce is good for any meats you are cooking up, and a bbq is not required...you can pour this over chicken and bake in the oven for really good in the house bbq meat. have fun!!
