bbq and party fixins

I get asked for recipes all the time, or I just plow in and say, "why not...."?
so, here's a few most requested. It's easier to put em here and send this out than write them on 3x5 cards ad nauseum.

BBQ PINEAPPLE Get a big, ripe pineapple, easily found by sniffing it,
if it smells ripe and good, it is. cut off the top and then slice it long ways in two halves.
Cut the hard center out, which will make a gully down the middle
then using a paring knife or steak knife, slice the fruit away from the skin without damaging the skin, as its a holder for on the bbq.

once this is done, place the fruit back in its skin.

on the stove place a medium sauce pan on low heat and put in the cheapest spaghetti
sauce you can find, to it add the following:

minced garlic,

minced onion

three big spoons of horse radish1/2 cup maple syrup

1 cup packed, of brown sugar {dark}.

let this simmer till its well done
taste it to make sure its tangy enough, add more of whatever you think will jazz it up more
according to how you want it to taste.

make it yours.
once this is done, place the pineapple on heavy foil, in its skin, gully side up, of course

on bbq day, wrap the pineapple in the foil and place on the bbq, adding extra bbq sauce as often as you want,,the more sauce, the tangier the pineapple will be. this sauce can be used on any meat, so yo only have to make the one btch and you're good to go.
